Honey Soy Tofu



Tofu in itself is a boring and bland thing. However is soaks up flavour magnificantly.  This dish is not a meal in itself but is a good accompaniment or perhaps useful for open sandwiches or a salad ingredient.

INGREDIENTS
1 pack tofu firm - sliced into strips
2 tablespoons rice bran oil
4 tablespoons liquid honey
2 tablespoons ginger puree
2 tablespoons soy sauce or tamari
4 tablespoons warm water
1 length spring onions
black and white sesame seeds for garnish
METHOD
1. heat a large non-stick fry pan and coat with oil
2. cook the tofu strips on high heat for around 5 minutes each side - they should firm up a little and darken slightly
3. mix the maranade of honey, ginger, soy sauce and water and pour over the tofu coating everything evenly
4. cook for around 3 minutes per side or until they turn golden brown - do not let them burn or run out of liquid
5. serve garnished with spring onions, sesame seeds and a couple of squiggles of liquid honey

Potato Fritters w Tomato Chutney

These little guys are a great hot breakfast snack and so fast.  You can make the mix up the day before and just hurl them in the pan.   However the chutney is what makes them awesome!



INGREDIENTS

  • 4 cups mashed potato
  • 1.5 cups rice milk
  • 1/2 teaspoon salt
  • 1/2 cup fresh parsley chopped
  • 2 tablespoons sweet chill sauce
  • 1 teaspoon curry powder
  • 1/2 cup chickpea flour (or you can use normal flour)
  • 2 eggs
METHOD
  • mix all ingredients together
  • spoon into a hot pan with a little oil
  • cook each side for around 2 minutes or until golden brown
  • undercook rather than overcook
